Week 2 of my lunch salads to get my life and eating habits back on track is Greek Chicken Salad
I love these salty olives with chicken for lunch. It is so satisfying!
Totals for what is listed below (I do not count the chicken Marinade): 367 Calories, 9.2g carbs, 15.7g fat, 45.2g protein
Salad:
2 Cups of Romain Chopped
5 Kalmata Olives
1 oz Feta Cheese
1 Cup of Cucumbers Diced
1 TBL Greek Dressing of Choice
Red Onions to taste
Directions:
Mix and let sit for 5-10 minutes
Greek Chicken:
1 Chicken Breast (6 oz)
1 TBL Greek Dressing
1 TBL Greek Yogurt
Directions:
Filet chicken breast almost all the way in half, but leave the center attached. Mix dressing and yogurt and coat the chicken. Marinate chicken at least 30 minutes
Heat grill to high heat
Cover with plastic wrap or parchment paper and pound flat with a meat mallet.
Place over hot grill and cook 2-3 minutes
Flip and cook 2-3 more minutes
I like my chicken really well cooked so you may need less time.
