Lunch Salads - BBQ Chicken and Slaw

Week 1 of my lunch salads to get my life and eating habits back on track is BBQ Chicken and Coleslaw!



Ok, so yes.. I know... this is not a salad, but I have been volume eating a bit so I am full longer and coleslaw really helps with that.


Totals for what is listed below: 319 Calories, 21.3g carbs, 6.4g fat, 41.9g protein


Slaw:

1/4 Head of cabbage sliced as thin as you can make it ( About 2 Cups)

2 TBL Kraft Cole Slaw Dressing


Directions:

Mix and let sit for 5-10 minutes


BBQ Chicken:

1 Chicken Breast (6 oz)

Sprinkle of BBQ Rub

1 TBL Sweet Baby Ray - No Sugar Added


Directions:

  1. Heat grill to high heat

  2. While the grill is heating, filet chicken breast almost all the way in half, but leave the center attached.

  3. Cover with plastic wrap or parchment paper and pound flat with a meat mallet.

  4. Season with BBQ seasoning of choice - I like this one here

  5. Place over hot grill and cook 2-3 minutes

  6. Flip, coat with BBQ sauce, and cook 3-5 more minutes.


I like my chicken really well cooked so you may need less time.
