Fig Preserves



I just made whipped cheese and homemade fig preserves! Neither are low carb, but they will help me get through this weekend full of Temptations!

Gluten-free, not low-carb!

Remove stems from one package of dried figs and chopped finely or place in Cuisinart. Add 1 cup of water to saucepot and allow to rehydrate. Once that has absorbed add a half a cup of maple syrup, a quarter cup of balsamic vinegar, and allow that to come up to 200°. Star in the juice of one lemon. You can leave it alone, or purée again and use a fine mesh strainer and push the purée through to remove the seeds and pulp. Then I keep the seeds and pulp separate for when I want some thing with a little more crunch!


Whipped cheese is room temperature 3 ounces of cream cheese, 6 ounces of feta (The one in water is the best) Allowed to come to room temperature and whip until smooth! These are great on keto crackers!
