I made Asian style lettuce cups for dinner tonight!
I really hate ground chicken! I even hate ground turkey! It’s some thing about the texture… However, I found a new method to get my chicken in tiny little pieces that is actually really delicious!
I take a chicken breast and put it in a plastic bag and pound the ever living crap out of it! Then, I take the sad little scraps and run my knife through it a whole bunch of times so that it is very finely chopped up.
or, I run it through the meat grinder on the coarsest setting!
This is enough for two meals,
8 oz of diced onions
8 Oz of mushrooms diced
5 cloves of garlic,
1 TBL fresh ginger cooked with a little bit of sesame oil,
16 ounces of Chicken,
five Boston lettuce cups,
2 tbl Gf teriyaki sauce,
1 Tbl GF hoisin,
1 tsp rice vinegar
and sriracha!
You can even top with a little Sriracha mayo if you have the extra calories to spare!
Or add some cashews or ever water chestnuts (high carb but GF)
directions:
In a Wok over high heat add sesame oil, ginger, chicken, onion, mushrooms, and garlic. Cook though.
Add sauces and cook until heated through!
serve with lettuce cups and enjoy!
